To Make Taco Shells: Brush flour tortillas lightly with olive oil and place in warmed skillet on the stove. Flip after a few minutes.

The Boho, The Stripper & The Rocker

The Boho

Who says tacos can’t be vegetarian? Cut an eggplant into ¾-inch thick pieces, brush with olive oil and season with salt, pepper and a little cayenne if you like spice. Grill 4-5 minutes per side or until tender. Slice or cube and place in taco shells. Top with homemade slaw.

The Stripper

Season a New York Strip steak with salt and pepper, then grill to medium-rare. Slice into strips and lay in taco shells. Top with sliced peppers and crumbled fresco cheese.

The Rocker

Season rockfish fillets with salt, pepper and a little olive oil. Grill until cooked through, about 3 minutes a side. Place in taco shells and top with pico de gallo and jalapeños.

Ingredients
  1. 1 cup diced tomatoes
  2. ¼ cup diced red onion
  3. ¼ cup diced green onion
  4. ½ cup chopped fresh cilantro
  5. (optional) 1 small jalapeño, diced (veins and seeds removed)
  6. 2 teaspoons lime juice
  7. Salt & pepper to taste
Instructions
  1. Mix all ingredients in a bowl, then serve. Pico de gallo is best eaten fresh.

  1. 1 can black beans
  2. 1 small can sweet corn
  3. ½ cup diced red onion
  4. 1 cup diced grape tomatoes
  5. ¼ cup chopped fresh cilantro
  6. ¼ cup balsamic vinegar
  7. ¼ cup olive oil
  8. ¼ teaspoon garlic powder
  9. ¼ teaspoon chili powder
  10. ¼ teaspoon cumin
  11. Salt & pepper to taste
Instructions
  1. Drain and rinse black beans and corn. Combine all ingredients. Chill and serve.

Homemade Slaw

Ingredients
  1. 1 cup sliced and chopped red cabbage
  2. 1 cup sliced and chopped Napa cabbage
  3. 1 cup chopped kale
  4. ½ cup red wine vinegar
  5. 2 tablespoons olive oil
  6. Juice from half a lime
  7. 1/8 teaspoon cayenne pepper
  8. Salt & pepper
Instructions
  1. Toss the cabbage and kale together. In a separate bowl, mix together the vinegar, oil, lime juice, cayenne, salt and pepper. Pour dressing over veggies and mix. Tip: Buy bagged cabbage mix and skip the chopping!
