Perfect Healthy Finger Sandwiches

Cucumber & Avocado Sandwiches

Ingredients
  1. 1 (8-oz) package Neufchâtel
  2. 8 slices bread, crusts removed
  3. 1 cup fresh arugula
  4. 1 English cucumber, peeled and thinly sliced
  5. 2 avocados, peeled and thinly sliced
  6. 1 tsp. chopped fresh dill
  7. Salt & pepper to taste
Instructions
  1. In a small bowl, combine Neufchâtel, salt and pepper. Spread about 1 tablespoon of the mixture onto a slice of bread.
  2. Layer arugula, cucumber and avocado, then sprinkle with dill.
  3. Top with a second slice of bread.
  4. Cut sandwich into four rectangles.
  5. Repeat with remaining ingredients.
  6. Serve immediately.
Notes
  1. Pair with silver needle white tea.

Egg Salad Sandwiches

Ingredients
  1. 6 eggs, hard-boiled
  2. ¼ cup plain, non-fat Greek yogurt
  3. 1 tsp. Dijon mustard (or powdered mustard)
  4. 1 tsp. chopped fresh dill
  5. Salt & pepper to taste
  6. Fresh baby spinach
Instructions
  1. Peel and chop the eggs, discarding two of the yolks if you prefer a slightly less “eggy” taste.
  2. Place in a mixing bowl, then fold in the yogurt, mustard, dill, salt and pepper.
  3. For sandwiches, spread on toasted whole wheat bread, then top with spinach leaves.
Notes
  1. Pair with assam black tea.
