  1. 2 cups all-purpose flour
  2. 1½ tsp. baking powder
  3. 1½ tsp. baking soda
  4. 1 tsp. kosher salt
  5. 1 tbsp. matcha powder
  6. ½ cup plus
  7. 1 tbsp. sugar
  8. 1⅓ cups buttermilk
  9. 1 large egg
  10. ⅓ cup canola oil
  11. 1½ tsp. vanilla extract
  12. ½ tsp. almond extract
  13. 1 cup white chocolate chips
  1. Preheat the oven to 400º F. Line and grease a muffin pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, matcha powder and ½ cup of sugar.
  3. In a separate bowl, whisk together the buttermilk, egg, oil and extracts.
  4. Add the wet ingredients into the dry ingredients and stir to combine. Fold in the white chocolate chips.
  5. Spoon the batter into the muffin cups, sprinkle the tops with the remaining tablespoon of sugar and bake for 16-18 minutes, until the tops are lightly browned.
  6. Let cool slightly in the pan and then transfer to a wire rack to cool completely.
