Cold Soups for Hot Days

Hot, steamy days call for cold soups! We asked Chef Angelique Santana, author of the vegan cookbook “food is love: there are no rules in food and love,” to share some healthy cold soup recipes that are sure to satisfy your belly this summer. All recipes are vegan, but feel free to add meat of your choice.

Carrot Orange Ginger Spice

Ingredients
  1. 3 cups water or vegetable broth
  2. 2 cups orange juice, squeezed
  3. 1/2 cup yellow onion, chopped
  4. 1 cup red bell pepper, chopped
  5. 1 pound carrots, chopped
  6. 1 tablespoon ginger, grated
  7. 1 teaspoon cumin
  8. Salt, to taste
Instructions
  1. Add liquids to a high-speed blender first.
  2. Add remaining ingredients and blend until thoroughly combined.
  3. Chill and serve.

Lemony Asparagus Soup

  1. 1/2 cup, fresh-squeezed lemon juice
  2. 1-2 cups water or vegetable broth
  3. 1 pound asparagus, chopped
  4. 1/2 cup yellow onion
  5. 1 clove garlic, minced
  6. 1/2 teaspoon sea salt
  7. Black pepper to taste

  8. 1/2 teaspoon sea salt
  9. 1/4 teaspoon black pepper
