French Lentil Salad 
with Quinoa

DRESSING
  1. 3/4 cup olive oil
  2. 1/4 cup sherry vinegar
  3. 2 tablespoons whole grain mustard
  4. 1 garlic clove
  5. 1 teaspoon sugar
  6. Salt and pepper
  7. 4 cups cooked french green lentils
  8. 1 cup cooked quinoa
  9. 12 ounces cooked petite green beans or asparagus, cut in half on bias
  10. 2 cups shredded carrots
  11. 1 small red onion, thinly sliced
  12. 2 cups yellow and red grape tomatoes, cut in half
  13. Zest of 1 lemon
  14. Chopped parsley
  15. Chopped fresh thyme
  16. Salt and pepper
Instructions
  1. Place first 5 ingredients in blender and pulse to incorporate without over blending. Season with salt and pepper.
  2. Toss all salad ingredients together in a large bowl, drizzle with dressing and mix well.
