Baking with Mint

Fresh Mint Frosting

1 cup fresh mint leaves, finely minced
4 oz cream cheese
2 sticks unsalted butter, soft
1/4 teaspoon kosher salt
1 teaspoon vanilla extract
1 1/2 cups powdered sugar

• Using a stand mixer, combine the cream cheese, butter, salt and mint leaves
• Beat on low until well combined, stopping to scrape down the sides
• Add the powdered sugar and vanilla extract
• Continue to mix on medium-high for 3 minutes, until light
• Use to frost a dozen cooled cupcakes or a cake
