Vegan Banana Chocolate Chip Cookies

Ingredients
  1. 1 cup gluten-free rolled oats
  2. 1 cup bananas, ripe and mashed (about 2 bananas)
  3. 1/2 cup vegan dark chocolate chips
  4. 1/4 teaspoon salt
  5. 2 tablespoon cocoa powder
  6. 3 tablespoon unsweetened shredded coconut (optional)
Instructions
  1. Preheat oven to 375F.
  2. Line two cookie sheets with parchment paper and set aside.
  3. Add all of the ingredients in a large bowl. Mix well.
  4. Drop spoonfuls of cookie batter onto the lined cookie sheets a few inches apart and flatten them slightly with the base of a spoon. Bake for 10 minutes.
  5. Let them cool on the baking sheet for five minutes before serving.
  6. Makes 10-12 cookies
