Strawberry Shrub

Ingredients

1 cup chopped strawberries

1 cup sugar

1 cup champagne vinegar

Instructions

If you have time to make in advance: Place strawberries and sugar in sealable container, and leave at room temp until the sugar draws out all of the juices from the strawberries. Add the vinegar and put in the fridge for a few days, then strain for use. In a pinch, add the strawberries and sugar to a saucepan and mix until all the sugar is dissolved, then add vinegar and simmer for 5 minutes.
Strain and chill.
