Persian Salad

Simple Persian Salad

Ingredients
  1. 2 cucumbers, seeded, diced
  2. 4 medium tomatoes, diced
  3. 1 medium red onion, diced
  4. 2 tablespoons fat-free feta cheese, crumbled
  5. 1/4 cup chopped, fresh mint or parsley, or 1 tablespoon dried mint or parsley
  6. 2 limes, juiced
  7. 1 tablespoon extra-virgin olive oil
  8. 1/2 teaspoon black pepper
Instructions
  1. Mix cucumber, tomatoes, onion, feta and herbs in a bowl and refrigerate for 20 minutes.
  2. In a small bowl, combine lime juice, oil and pepper. Whisk well.
  3. Pour over vegetable mixture and serve.
