Quinoa with Nuts 
and Sautéed Apples

Ingredients
  1. 1 cup uncooked quinoa
  2. 2 teaspoon grapeseed oil, divided
  3. 3/4 cup onion, diced
  4. 2 carrots, finely diced
  5. 2 garlic cloves, minced
  6. 2 cups vegetable broth
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon ground cinnamon
  9. 1 Granny Smith apple, finely diced
  10. 3 tablespoon sliced almonds or pecans, toasted
  11. 1/8 teaspoon ground black pepper
Instructions
  1. Place quinoa in a fine sieve, then place the sieve in a large bowl. Cover quinoa with water and rub grains together for 30 seconds. Rinse and drain. Set aside.
  2. Heat 1 teaspoon grapeseed oil in a saucepan over medium-high heat. Add diced onion, carrots, and garlic to the pan, and sauté for 5 minutes or until onion is tender.
  3. Stir in vegetable broth, rinsed quinoa, salt, and cinnamon. Bring to a boil, then cover, reduce heat, and let simmer for 20 minutes (or until liquid is absorbed). Remove from heat. Fluff with a fork and keep warm.
  4. Heat remaining grapeseed oil in a skillet over medium-high heat. Add apple to pan and sauté until apple begins to brown (about 7 minutes). Add apple, almonds, and black pepper to quinoa, and toss gently to combine. Serve warm.
