Ingredients
  1. One 15 ounce can lentils, drained and rinsed
  2. 3 tablespoons tomato paste
  3. 1/2 cup tomato sauce
  4. 1 small sweet onion, chopped
  5. 1/2 cup fresh corn – (grilled or roasted has best flavor)
  6. 2 stalks celery, trimmed and chopped finely
  7. 1/2 cup chopped mushrooms (optional)
  8. 1 cup finely chopped spinach
  9. 1 teaspoon cumin
  10. 1 teaspoon smoked paprika
  11. 1 teaspoon ground mustard seed
  12. 1 clove garlic, chopped
  13. 1 teaspoon chipotle powder or chili powder
  14. 2 tablespoons honey, brown sugar or pure Virginia Maple Syrup
  15. 2 tablespoons cider or white vinegar
  16. 1 tablespoon extra virgin olive oil
  17. salt and black pepper to taste (about 1/4 teaspoon salt)
  18. 6 sprouted grain or favorite burger buns, sliced in half
  19. For pan: 1 teaspoon extra virgin olive oil
  20. Topping ideas – romaine lettuce, avocado, sliced tomato, 
shredded carrots, pickles
Instructions
  1. Combine all ingredients in a stockpot and cook on low heat until vegetables are tender, 10 to 15 minutes.
  2. Add 1/2 cup portions of burger mix on each bun. This can be made into taco filling by adding 1 teaspoon cilantro and omitting mustard seed.
  3. Serve with sliced apples, greek yogurt dip & cinnamon sprinkles and a small green salad with carrot ribbons & cherry tomatoes
