Okra is a great source of fiber and vitamins like A, C, K and folic acid. It also has a TON of antioxidants and some trace minerals like iron and calcium.

Ingredients
  1. 6 oz okra, sliced medium thickness, tops removed
  2. 2 small yukon gold potatoes, diced small
  3. 1/3 cup cornmeal (stone ground preferably)
  4. 3/4 tsp salt
  5. 1/4 tsp pepper
  6. dash of cayenne pepper
  7. Vegetable oil
Instructions
  1. Combine dry ingredients in a large bowl. Toss in okra and potatoes to coat. In a large skillet (I use a cast iron skillet) cover the entire bottome with a thin layer of oil and heat on medium. Place okra/potato mixture in the pan and cook, tossing occasionally until potatoes are slightly browned and cooked through (about 5 minutes). Remove onto a plate with paper towel. Serve immediately for best taste and texture.
