Ingredients
  1. 2 teaspoon grapeseed oil
  2. 1/2 cup shallots, finely chopped
  3. 3 1/2 cups wild or cultivated mushrooms (about 12 ounce), finely chopped
  4. 1/2 cup (4 ounce) 1/3 less-fat cream cheese, softened
  5. 2 tablespoon dry sherry
  6. 2 tablespoon fresh flat-leaf parsley, minced
  7. 1/2 teaspoon salt
  8. 1/8 teaspoon fresh ground black pepper
Instructions
  1. Heat oil in a large skillet over medium heat. Add shallots
  2. and cook until tender (about 3 minutes), stirring occasionally.
  3. Add mushrooms and cook until liquid evaporates (about
  4. 7 minutes), stirring occasionally.
  5. Place mixture in a medium bowl. Place half of the mixture in a food processor with cream cheese and sherry. Process until smooth.
  6. Add puréed mixture to remaining mushroom mixture;
  7. then add salt, pepper and parsley. Stir until combined.
