Thyme-Roasted Salmon with Crunch Veggie Salsa

Ingredients
  1. 4 salmon fillets (about 4 ounces each), rinsed and patted dry
  2. 1 teaspoon dried thyme, crumbled
  3. 1/4 teaspoon salt
  4. 1/4 teaspoon pepper (coarsely ground preferred
For the salsa
  1. 1/2 medium cucumber, seeded and chopped
  2. 1/4 cup quartered or chopped grape tomatoes (about 2 ounces)
  3. 1/2 medium green bell pepper, chopped
  4. 1/4 cup finely chopped radishes
  5. 2 tablespoons snipped fresh cilantro
  6. 2 tablespoons finely chopped red onion
  7. 1 teaspoon grated lime zest
  8. 2 tablespoons fresh lime juice
  9. 1 teaspoon olive oil (extra virgin preferred)
  10. 1/4 teaspoon salt
Instructions
  1. • Preheat the oven to 350 F.
  2. • In a medium bowl, gently stir together the salsa ingredients and set aside.
  3. • Line a baking sheet with aluminum foil and lightly coat it with cooking spray.
  4. • Place the fish on the foil and sprinkle with thyme and salt and pepper and gently massage the spices into the salmon using your fingertips.
  5. • Bake in the oven for 20 minutes or until the salmon is fork-tender and gently flaking.
  6. • Transfer the fish to plates and spoon the salsa and its accumulated juices over the fish.
