Honey Barbecue Grilled-Chicken

Ingredients
  1. 4-6 Chicken Quarters (or any mix of chicken)
Marinade
  1. 4 T Olive Oil
  2. 5 t Kosher Salt
  3. 2 t Chili Powder
  4. 2 t Smoked Paprika
  5. 2 t Chipotle Powder
  6. 2 t Brown Sugar
  7. 2 t Fresh Thyme
  8. 2 t Black Pepper
  9. 2 Cloves, minced
Honey Glaze
  1. 1/2 Cup honey
  2. 2 T soy sauce
  3. 2 T ketchup
  4. 4 t dijon mustard
  5. 4 t worcestershire sauce
  6. 2 t apple cider vinegar
Instructions
  1. • Marinade: Mix olive oil, kosher salt, chili powder, smoked paprika, chipotle powder, brown sugar, fresh thyme, black pepper and 2 cloves minced garlic.
  2. • Rub this mixture over four to six chicken quarters, cover and allow to marinate overnight.
  3. • Honey Glaze: Combine honey, soy sauce, ketchup, dijon mustard, Worcestershire sauce and cider vinegar. Separate into two containers, one for brushing over the chicken as it cooks and one for using as a dipping sauce.
  4. • Place chicken pieces over high heat on the grill (450°F) with skin-side down and cook with the grill lid closed, checking periodically and turning over when chicken is browned and released easily from the grates. (5-10 minutes)
  5. • Flip the chicken pieces, and brush with the honey glaze, allowing to cook for another 15-20 minutes, brushing more glaze on every five minutes.
  6. • The chicken is done when a meat thermometer inserted into the thickest part of the chicken reads 165°F.
  7. • Allow the chicken to rest for five minutes and then serve with the reserved container of honey glaze.
