Ingredients
  1. 1 pound extra firm tofu, pressed and cut into sticks
  2. 3/4 cup Frank’s hot sauce, divided
  3. 1 tablespoon olive oil
  4. dash olive oil spray, or other oil of choice
  5. 1/2 cup almond meal
  6. 2 tablespoons nutritional yeast
  7. 1 teaspoon applewood smoked salt
  8. 1/2 teaspoon pepper
  9. 1 teaspoon onion powder
  10. 1 teaspoon granulated garli
Instructions
  1. 1. Press the tofu by wrapping in paper towels and using a heavy frying pan or pile of cookbooks on top, for at least 20 minutes, to remove excess moisture.
  2. 2. Cut the tofu vertically into about 8-10 long pieces. Cut those slabs vertically in half to form about 16-20 sticks. (Pro-tip: If you want the shapes to be more organic and less stick-like, use a vegetable peeler to shave off any right angles. Reserve the tofu scraps for a stir-fry.) Prick the pieces all over with a fork to help the tofu absorb the marinade.
  3. 3. In a small bowl or a medium-sized resealable plastic bag, mix 1/2 of the hot sauce and oil together. Add the tofu sticks to the hot sauce mixture, toss to evenly coat, seal the bag or cover the bowl, and marinate overnight in the refrigerator.
  4. 4. Preheat the oven to 350ºF, line a baking sheet with foil, and spray with oil.
  5. 5. In a large mixing bowl, mix the almond meal, yeast, salt, pepper, onion powder, and garlic powder until combined. Add the tofu in the seasoning mix, shake the bowl from side to side making sure the breading mixture sticks to each side evenly. Place the breaded tofu on the prepared baking sheet.
  6. 6. Spray the tofu with oil spray and bake for 15 minutes, flip the tofu, and bake 20 minutes longer, until the sticks are crispy.
  7. 7. Let the tofu cool slightly before gently tossing the tofu in hot sauce and serving.
